Soumada is made with the sweet almond juice – along with some bitters to get the characteristic aroma – which is combined with a sugar syrup. It becomes an off-white syrup, like milk, which smells almond! It is served very cold, it is unique in taste and is very tonic.
Traditionally, it was the treat of the guests in engagements and weddings. Besides the obvious reason of “white color” was chosen, because the almond milk is very nutritious and gives strength.
