The term  PDO means Protected Designation of Origin and is the name identifying a product originating from a particular place, region or, in exceptional circumstances, a country whose quality or characteristics are mainly or exclusively due to the particular geographical environment including natural inherent and human factors, and of which all stages of production are carried out within the demarcated geographical area.

The term PGI stands for Protected Geographical Indication and refers to the designation identifying a product originating from a specific place, region or country whose particular quality, reputation or other characteristic can be attributed mainly to its geographical origin and of which at least one of the production steps is carried out within the defined geographical area.
